    The formulation of the filter permits the proper infusion time by regulating the filtration rate - not too slow, not too fast. Good infusion of the coffee grounds (as in brewing and steeping tea) gives coffee a richer flavor while at the same time making possible precise fractional extraction: filtering out the undesirable components which make coffee bitter by allowing only the desirable flavor elements of the coffee bean to pass through.

    The Chemex filter is folded into a cone shape, exactly as in laboratory techniques. This assures uniform extraction since the water filters through all the grounds on its way to the apex of the cone. The Chemex filter is guaranteed not to burst under the weight of the liquid during filtration, and not to break when lifting out the grounds.

    To Adjust the Grind

    1. Unscrew the top and remove the handle. 
    2. Lift the burr locking fork.
    3. Rotate the cogwheel clockwise to tighten the burrs for a finer grind; or rotate counter-clockwise to loosen the burrs for a more coarse grind.
    4. Be certain to replace the locking fork and handle before attempting to grind again. It is an open-top, so keeping the grinder level is necessary when grinding.

    Create a delicious cup of coffee every time:

    1. Start by boiling water. The ideal temperature for brewing coffee is between 195°F to 205°F (90°C to 96°C), so allow the water to cool down for a minute or two after boiling.
    2. While the water is boiling, grind your coffee beans to a medium-fine grind size. A finer grind will produce a stronger cup of coffee, while a coarser grind will produce a milder cup of coffee. Generally you will get the best results with a coffee:water ratio of 1:15 to 1:17.
    3. Place the stainless steel mesh filter on top of your Mason jar or mug. Optionally, rinse the filter with hot water first to remove any residual coffee oils and to preheat the filter.
    4. Add the ground coffee to the filter and shake to level. For a 16oz pint jar, you should use about 1 ounce of ground coffee, which is about 5 tablespoons.
    5. If your coffee is fresh, pour just enough water to wet the coffee grounds, and let it bloom for about 30 seconds.
    6. Slowly pour the rest of the hot water over the coffee grounds, starting from the center and moving outward in a circular motion. Maintain a steady, slow pour to avoid over-extraction or under-extraction.
    7. Once you have poured all the water, wait for the coffee to drip through the filter and into the jar. This process may take a few minutes, so be patient.
    8. Once the coffee has finished dripping, remove the filter and discard the coffee grounds. Rinse out the filter immediately. You can put it in the dishwasher or wash by hand.
    9. Enjoy!

    Pour over coffee will produce different results with different amounts of coffee, types of beans, grind size, and speed of pouring water. Experiment to make the perfect cup!

    Oils from coffee will naturally build up over time. If you find your coffee isn't filtering through as well as before, you can soak the filter in a mixture of hot water, baking soda, and white vinegar to remove any build-up in the mesh.

    Coffee and tea made through this system is good for you and the environment. Did you know that cold brewed coffee has a lower acidity level, which is good for your teeth and your stomach? Because it's never been heated, the chemistry isn't changed, you can save it in your fridge for a week or two and the taste is never altered.

    This system includes:
    • Two different silicone seals in order to make it leak proof. Use only one at a time.

    Directions:

    For brewing and steeping:

    • Only use the "wrap around" silicone seal that seals both sides of the metal filter (against glass and lid). This seal is optional if you keep the jar upright.
    • Cold Brew Coffee - To make cold brew coffee concentrate, fill the filter tube about 3/4 full with coarse ground coffee, to allow for swelling. Pour in cold water to fill jar and allow it sit on your counter or in your fridge for 24 hours.
    • Loose Leaf Tea - To steep loose leaf tea, combine 1-2 teaspoons of your favorite tea with 6-8 oz of cold water and place in fridge. Steep white or green tea for 6 to 8 hours; steep black or oolong tea for 8 to 12 hours depending on desired strength.
    • Hot Coffee or Tea - You can also use this filter to make hot coffee and tea. Put the grounds or leaves in the filter, pour in 200 degree water, and wait a few minutes.
    • Once brewing/steeping is complete, remove the filter, dump grounds/leaves into your compost, pour over ice, add your favorite coffee/tea additions and enjoy!

    For storing:

    • Keep your brewed coffee and tea in your Mason jar fresh and leak proof with the other silicone seal and stainless steel lid included.

    Helpful tips:

    • Be sure you use coarse ground coffee! A higher quality coffee grinder will give you a more consistent coarse grind. Cheaper grinders produce a mix of coarse all the way down to powdery grinds. 
    • The cold brew coffee concentrate will be strong, so you may need to dilute it. Serve it hot or over ice, add sugar or dairy, or any other way you like!
    • To make a more concentrated version, use more coffee grounds or steep for longer. Cold brew coffee is commonly made very strong and diluted at serving time.
    • They are 10cm, 15cm, and 21cm tall. The mesh part is 7cm in diameter. The mesh is 50 micron dutch weave.
    • All parts are dishwasher safe.
