What is "specialty coffee?" It's a term for the highest grade of coffee available, relating to the entire supply chain, using single-origin or single-estate coffee. Each coffee is given a rating and anything over 80 is considered specialty-grade. That's what most coffee shops use (though not most brands in the grocery store aisle).
So, if you start by buying high-quality coffee, you're ahead of the game. Because even the best pour-over or French press techniques won't matter if you're using a coffee in the 70 rating range.
